Lithuanian Pancakes the FoPo Way

(The basic recipe was adapted from Ieva Lucinskyte via http://gbtimes.com/recipe/lithuanian-cheese-pancakes)

Servings: 5                        Time: 1 h

Ingredients:

120 g flour
250 ml milk
2 eggs
oil/butter for greasing the pan

Olive (per 1 large pancake):1 - 2 tsp olive powder
1 large tbsp of cottage cheese
1 chopped dried tomato

As topping: 1 tsp cream cheese, 1/2 dried tomato, rucola, parmesan 

Apple (per 1 large pancake):
1 - 2 tsp apple powder
1 large tbsp of cottage cheese
1/4 tsp cinnamon

As topping: 1 tsp cream cheese, honey, nuts

Banana (per 1 large pancake):
1 tsp banana powder
1 large tbsp of cottage cheese

As topping: 1 tsp cream cheese, chocolate sauce

Calamansi/Pineapple/Mango (per 1 large pancake):

1 - 2 tsp powder
1 large tbsp of cottage cheese

As topping: 1 tsp cream cheese, extra sprinkle of powder

Procedure:

Mix all ingredients for the pancake with a whisk until it forms smooth, runny batter. Heat the pan with butter or oil and make 5 large pancakes by scooping the dough onto the pan and swirling quickly. Fry shortly on both sides. 

For cream cheese filling, mix all ingredients well, spread on pancake (leave ca. 3 cm free around the edges) and fold. 

Put all pancakes on a greased baking pan or baking tray with baking parchment and bake a 200 `C for 20 min.

 

Mango Lassi

Servings: 2                        Time: 2 min

Ingredients:

2 cups (2 x 150 g) stirred white yoghurt
150 ml milk
4 tbsp mango powder
Pinch of cardamon (optional)

 

Procedure:

Mix all ingredients in a shaker (or stir vigorously in a cup with a fork) and serve!

Tip: use an empty yoghurt cup to measure the amount of milk.

 

Apple-cinnamon vegan mugcake

Servings: 1                 Time: 3 min

Ingredients:

2 tbsp flour
1 tsp sugar
Pinch of salt
1 tbsp banana powder
1.5 tbsp (10 g) apple powder
½ tsp baking powder
¼ tsp cinnamon
4 tbsp almond milk

 

Procedure:

Mix all dry ingredients in a microwave-safe mug until well blended. Add almond milk and mix well, taking care that none of the dry mix remains unblended. Microwave for roughly 90 s - adjust according to your model of microwave.


Chocolate banana vegan mugcake

Ingredients:

                      Servings: 1                                   Time: 3 min

2 tbsp flour
1 tsp sugar
Pinch of salt
1 tbsp banana powder
1 tbsp cocoa powder
½ tsp baking powder
3 tbsp almond milk
1 tbsp applesauce  or 1 tbsp apple powder & 2 tbsp water

Procedure:

Mix all dry ingredients in a microwave-safe mug until well blended. Add almond milk and applesauce and mix well, taking care that none of the dry mix remains unblended. Microwave for roughly 90 s - adjust according to your model of microwave.

Salad dressing

Ingredients:

                 Servings: 2                                      Time: 30s

 

50 g (half a bag) of salad leaves mix
3 tsp olive oil
3 tsp olive powder
2 tsp lemon juice (or calamansi lemon powder)
Pinch of black pepper


Procedure:

Simply mix all ingredients in a bowl!

Apple snowballs

A quick and healthy snack for cold winter days! No special kitchen equipment necessary, so can easily be done in the office.

Ingredients:

              Serving size: 6 balls                                              Time: 3 min
 
20 g of Golden Delicious Apple powder
3 tbsp of grated nuts (e.g. hazelnuts, walnuts)
3 tbsp water
optional: pinch of cinnamon
 
Coating: 2 tbsp grated nuts and/or 2 tbsp krokant
 
Procedure:

1.         Mix apple powder with grated nuts and water
2.         Form the dough by mixing with spoon or fingers
3.         Form 6 small balls and coat them in grated nuts or krokant. Instead of balls you can also form one bar and cut it into pieces to make the preparation even quicker!

 

O-love dip

Whether you are a couchpotato craving for a quick and healthy snack or a busy bee wanting to impress your friends with a homemade olive dip, this recipe is for you!

Ingredients:

1 pot of cream cheese (e.g. Philadelphia, usually 175g)
1-2 tsp FoPo green olive powder (depends on how strong you like your olive dip)
a pinch of pepper
a pinch of garlic

Procedure:

Mix all ingredients together in a bowl and you're ready to serve in just a couple of minutes! Enjoy!
